Directions

Combine sugar, water, and honey in a heavy saucepan, stirring to mix.
Bring mixture to a boil (do not stir), and cook to soft ball stage (240°).
Remove from heat; add flavorings, and cool to lukewarm.
Beat with an electric mixer 2 to 3 minutes or until mixture turns creamy.
Add pecans, stirring until coated.
Drop by heaping teaspoonfuls onto waxed paper.
Let cool.
