Honey-Lemon Cookies Recipe
Ingredients
| Soft margarine | 1/2 Cup (16 tbs) | |
| Superfine sugar | 1/2 Cup (16 tbs) | |
| Egg | 1 | |
| Clear honey | 4 Tablespoon | |
| All purpose flour | 2 1/4 Cup (16 tbs) | |
| Baking powder | 1 Teaspoon | |
| Salt | 1 Pinch | |
| 1/3 cup chopped mixed candied peel | ||
| 6 tablespoons lemon curd | ||
Directions
Cream the margarine and sugar until just mixed .
Add the egg and honey and mix until incorporated.
Add the flour, baking powder and salt and process to a soft dough.
Put heaped teaspoonfuls of the mixture on to a greased baking sheet.
Flatten the tops with a fork dipped in cold water.
Put a little peel on top of half the cookies.
Bake at 350°F for 20 minutes.
Lift carefully on to a wire rack to cool.
When cool, sandwich pairs of cookies together with lemon curd, with peel-topped cookies on top.
