Honey Glazed Cornish Hen Recipe
Ingredients
| Mint | 2 Tablespoon, finley chopped | |
| 2 teaspoons each honey, heated, and olive oil | ||
| Garlic | 1 Clove (5gm), minced | |
| 1 Cornish hen (1 1/4 pounds), skinned and cut in half | ||
| Salt | 1/2 Teaspoon | |
| Lemon juice | 2 Tablespoon | |
| Mint sprigs | ||
Directions
In small bowl combine chopped mint, honey, oil, and garlic.
In 8 x 8 x 2-inch nonstick baking pan sprinkle both sides of hen halves with salt; brush mint-honey mixture over entire hen and sprinkle with lemon juice.
Bake cut-side down at 400°F until tender, 25 to 30 minutes.
Remove baking pan from oven and baste hen with pan juices.
Set oven control to broil and broil hen 3 inches from heat source until browned and crisp, about 1 minute.
Garnish with mint sprigs before serving.
