Ingredients

 Chicken breast1
 2 drumsticks and 2 thighs, skinned
 Onion4 Tablespoon, finley chopped
 Honey1 1/2 Tablespoon
 Reduced sodium soy sauce1 Tablespoon
 Minced ginger1 Tablespoon, grated
 2 medium cloves garlic, minced 2 tablespoons sherry
 Scallions1/4 Cup (16 tbs), thinly sliced

Directions

Cut the breast in half and remove breastbone.
Combine the onion, honey, soy sauce, ginger, garlic and sherry.
Arrange chicken pieces in single layer, preferably in baking dish that can go into the oven as well as the freezer.
Spoon the marinade mixture evenly over chicken pieces.
Wrap for freezer and freeze.
To serve, return to room temperature and bake at 500 degrees for about 27 minutes.
Turn once or twice.
Run baking dish under broiler to brown, if necessary, but watch carefully or the chicken will burn and dry out.
Remove chicken.
Deglaze pan with three tablespoons water.
Serve with juices from bottom of the pan, which are especially good over the Chinese vermicelli.
Sprinkle with scallions.
