Ingredients

 Honey1⁄2 Pint (2 Gills)
 Sugar3 Ounce
 Almonds1 Ounce
 Candied orange peel1 Ounce
 Potash1⁄4 Ounce
 Rum1 Tablespoon
 White flour1 1⁄4 Pound

Directions

Boil honey with castor sugar in a saucepan.
When honey mixture has browned, add the almonds and orange peel—both chopped into longish pieces—and mix with the flour.
Flavour with rum.
When the dough has cooled a little, mix in a pinch of potash and then leave overnight.
The next day lightly grease and dust tin of desired size and shape with flour, put in dough and bake in a moderate oven until brown.
