Honey Cake Recipe
Ingredients
| Honey | 1⁄2 Pint (2 Gills) | |
| Sugar | 3 Ounce | |
| Almonds | 1 Ounce | |
| Candied orange peel | 1 Ounce | |
| Potash | 1⁄4 Ounce | |
| Rum | 1 Tablespoon | |
| White flour | 1 1⁄4 Pound |
Directions
Boil honey with castor sugar in a saucepan.
When honey mixture has browned, add the almonds and orange peel—both chopped into longish pieces—and mix with the flour.
Flavour with rum.
When the dough has cooled a little, mix in a pinch of potash and then leave overnight.
The next day lightly grease and dust tin of desired size and shape with flour, put in dough and bake in a moderate oven until brown.
