 Dried apricots2 1/4 Cup (16 tbs)
 Honey1 1/4 Cup (16 tbs)
 Lemon peel1 Teaspoon, finely chopped
 Orange peel1 Teaspoon, finely chopped
 Pineapple1/2 Cup (16 tbs), chopped

Directions

Cook apricots in enough boiling water to cover for 5 minutes.
Drain and let cool slightly.
With machine running on medium speed, add apricots to blender a few at a time, mixing well.
Add honey in slow steady stream (increasing speed if necessary), blending until mixture is thick and creamy (small pieces of apricot should remain).
Transfer to small bowl.
Stir in chopped peel.
Refrigerate at least 24 hours.
Blend in pineapple.
Cover and refrigerate until ready to serve.
