Ingredients

 
1 teaspoon unflavored gelatin
 
1/3 cup water
 
1/3 cup honey
 
1 teaspoon pure vanilla extract
 
1 teaspoon grated lemon rind
 
3 cups yogurt cheese
 
1 cup mashed banana, pureed peaches, nectarines, blueberries, strawberries, or raspberries
 
1 baked 9-inch Whole Wheat Pastry 1 pie shell or 1 9-inch Graham-Nut Pie Shell

Directions

1. Soften the gelatin in the water for 5 minutes. Heat the gelatin over low heat, stirring to dissolve. Cool.
2. Combine the honey, vanilla, and lemon rind in a bowl. Add the gelatin mixture slowly and then stir in the yogurt cheese until smooth. Stir in the fruit and pour into the pie shell. Chill overnight. Garnish with fresh fruits.
