 Thyme - 1 tbp
 Cinnamon - pinch
 Rind of orange - 1
 Raw egg - 1, lightly beaten
 Dry white wine1/4 Cup (16 tbs) (For Dressing)
 Grand marnier1/4 Cup (16 tbs) (For Dressing)
 Brandied peaches or cherries - for garnishing

Directions

GETTING READY
1 Preheat the oven to 425 degrees F.

MAKING
2 In a pan, heat the butter.
3 Add in chopped walnuts and onions, sauté lightly.
4 Remove from the heat and add in the remaining ingredients except butter and honey.
5 Stuff the duck using this prepared mixture and truss.
6 In a bowl, combine the butter and honey.
7 Evenly spread all over the surface of the duck.
8 Place on a rack and roast for 1 3/4 hours turning the duck once.
9 The skin will blacken and become crisp with the honey.

SERVING
10 Cut the duck into quarters.
11 Garnish with watercress and brandied peaches or cherries.
