Honey Pineapple Slices Recipe
Ingredients
| Honey | 1 Cup (16 tbs) | |
| Vegetable oil | 2 Tablespoon | |
| Egg | 1 | |
| 350 g - 12 oz self raising flour | ||
| Baking powder | 1 Tablespoon | |
| Salt | 1/2 Teaspoon | |
| 55 g - 2 oz chopped roasted nuts | ||
| 1 cup raw wheat bran | ||
| Pineapple juice | 1 Cup (16 tbs), canned | |
Directions
Preheat a 9 by 5" loaf pan.
Blend together the honey, oil and the egg gradually and mix well at full speed for a few minutes.
Sift together the flour, baking powder and salt, then coat the nuts with one half of the flour.
Gradually fold in the other half to the egg mixture, then mix in the bran and pineapple juice.
Finally add the remaining flour and nut mixture and mix gently but well together.
Pour into a lightly greased loaf pan and bake in a pre heated oven until golden, test to see if baked then cool slightly before turning out onto a cooling tray.
Serve hot or cold with honey and butter.
