Honey Peanut Muffins Recipe

Ingredients
1/4 cup whole wheat flour
3/4 cup all purpose flour
1/4 cup sugar
1 teaspoon baking soda
1/4 teaspoon salt (optional)
1 1/4 cups KELLOGG'S® ALL BRAN® Cereal
1 1/4 cups low fat buttermilk
1/4 cup honey
2 egg whites
3 tablespoons vegetable oil
1/4 cup chopped dry roasted peanuts
Nonstick cooking spray
Directions
Stir together flours, sugar, baking soda and salt.
Set aside.
Measure Kellogg's® All-Bran® cereal and buttermilk into large mixing bowl.
Stir to combine.
Let stand 3 minutes or until cereal is softened.
Add honey, egg whites, oil and peanuts.
Beat well.
Add flour mixture, stirring only until combined.
Portion batter evenly into 12 (2 1/2 inch) muffin pan cups coated with nonstick cooking spray.
Bake at 400°F about 22 minutes or until golden brown.
