Ingredients
6 medium-sized parsnips, peeled (about 1 1/2 pounds)
Boiling water
1 teaspoon salt
1/4 cup (1/8 lb.) butter or margarine
1/4 cup honey
Lemon juice
Cinnamon (optional)
Directions
Cut parsnips lengthwise in thin slices, then cut slices into pieces about 1 1/2 inches long.
Place in medium-sized pan and cover with boiling water.
Add salt and cook for 20 minutes, or just until tender.
Melt butter in a large frying pan; add honey, and cook, stirring, until bubbly.
Add parsnips, cover, and cook over low heat for 5 minutes.
