| 1 pound pork steak, pork loin or boneless chicken breast | ||
| Cornstarch | 1 Tablespoon | |
| Orange juice | 3/4 Cup (16 tbs) | |
| Honey | 1/3 Cup (16 tbs) | |
| Soy sauce | 3 Tablespoon | |
| Ground ginger | 1/4 Teaspoon | |
| Vegetable oil | 2 Tablespoon, divided | |
| 2 large carrots, sliced diagonally | ||
| 2 stalks celery, sliced diagonally | ||
| Peanuts or cashews | 1/2 Cup (16 tbs) | |
| Hot cooked rice | ||
Directions
Cut pork into thin strips; set aside. Combine cornstarch, orange juice, honey, soy sauce and ginger in small bowl; mix well. Heat 1 tablespoon oil in large skillet over medium-high heat. Add carrots and celery; stir-fry about 3 minutes. Remove vegetables; set aside. Pour remaining 1 tablespoon oil into skillet. Add pork; stir-fry about 3 minutes. Return vegetables to skillet; add honey mixture and nuts. Cook and stir over medium-high heat until sauce comes to a boil and thickens. Serve over rice.
