Honey N Date Loaf Recipe
Ingredients
2 tablespoons butter
1/2 cup honey
1 egg
1 teaspoon grated lemon rind
2 teaspoons lemon juice
1 & 1/2 cups unbleached white flour
1/4 teaspoon salt
1/8 teaspoon baking soda
1 teaspoon baking powder
1/2 cup buttermilk
1 cup chopped dates
1/2 cup chopped walnuts
Directions
1. Preheat the oven to 350 degrees.
2. Cream the butter and gradually beat in the honey. Beat in the egg, lemon rind, and lemon juice.
3. Combine the flour, salt, baking soda, and baking powder and add alternately with the buttermilk to the batter. Fold in the dates and walnuts.
4. Turn the mixture into an oiled 9- by 5- by 3-inch loaf pan.
5. Bake for 50 to 60 minutes or until done.
