Honey Mustard Potato Salad Recipe
Ingredients
| 3/4 cup plain nonfat yogurt or 3/4 cup yogurt cheese | ||
| 1 tablespoon prepared mustard, spicy or dijon | ||
| Honey | 2 Teaspoon | |
| Lemon juice | 1 Tablespoon | |
| Parsley | 2 Tablespoon, chopped | |
| 2 tablespoons chopped red or green pepper | ||
| Red onion | 1/4 Cup (16 tbs), chopped | |
| 3 cups cooked, sliced potatoes | ||
Directions
MAKING
1) Take a serving bowl and mix together yogurt, mustard, honey, lemon juice, parsley, sweet pepper, and onion in it.
2) Slowly mix in potato slices, tossing them to coat well with the dressing.
3) Cover the bowl and keep in refrigerator for a minimum of 15 minutes to allow chilling.
SERVING
4) Again mix well and if desired, drain the liquid from the salad and serve at once with a slotted spoon.
