Honey Lemon Muffins Recipe
Ingredients
3/4 cup Original Wheat, Rye, Bran, Flax Cereal
1 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 egg, slightly beaten
1 cup plain yogurt
1/2 cup vegetable oil
1/2 cup honey
2 teaspoons grated lemon peel
1 to 2 tablespoons lemon juice
Directions
In large bowl, combine cereal, flour, baking powder and salt.
In small bowl, mix egg, yogurt, oil, honey, lemon peel and juice.
Add liquid mixture to flour mixture; stir just until moistened.
Batter will be lumpy; do not overmix.
Spoon batter evenly into 12 greased 21/2-inch muffin cups.
Bake in preheated 375° oven 20 to 25 minutes or until golden brown.
Remove to wire rack to cool.
