 HAM & GLAZE
 1 fully cooked smoked whole ham (about 14 pounds)
 Packed brown sugar1/2 Cup (16 tbs)
 Honey1/2 Cup (16 tbs)
 Ground ginger1 Teaspoon
 MUSTARD SAUCE
 Sour cream1 Cup (16 tbs)
 Mayonnaise3/4 Cup (16 tbs)
 1 jar (8 ounces) Dijon mustard with seeds
 Worcestershire sauce1 Teaspoon
 1/2 teaspoon coarsely ground black pepper

Directions

1. Preheat oven to 325°F With sharp knife, remove skin and trim fat from ham, leaving 1/4-inch-thick layer of fat. Place ham, fat side up, on rack in large roasting pan (17" by 11 1/2"). Bake ham 2 hours 30 minutes.
2. Meanwhile, prepare glaze: In 1-quart saucepan, combine brown sugar, honey, and ginger; heat to boiling over medium-high heat. Boil 1 minute. When bubbling subsides, brush ham with some glaze. Bake ham, brushing occasionally with remaining glaze, until meat thermometer inserted into thickest part of ham (not touching bone) reaches 140°F, 30 minutes to 1 hour longer.
3. Meanwhile, prepare mustard sauce: In medium bowl, stir sour cream, mayonnaise, mustard, Worcestershire, and pepper until combined. Cover and refrigerate until ready to serve. Makes about 2 1/2 cups.
4. Serve ham with mustard sauce.
