Ingredients
1 pound beets
2 tablespoons honey
2 tablespoons apple cider vinegar
1 teaspoon arrowroot
Plain nonfat yogurt
Directions
GETTING READY
1) Scour beets and cut off tops and long roots.
2) Quarter beets.
MAKING
3) Allow beets to be steamed or boiled for 30 to 45 minutes (or more if required) until they become fork- tender.
4) Let cool and remove skins.
5) Slice into small pieces.
6) In a small saucepan, over medium heat, cook a mixture of honey, vinegar, arrowroot and beets for 3-5 minutes, stirring continuously, until beets are glazed and warmed well.
SERVING
7) Garnish with a dollop of yogurt and serve at once.
