Pastry for 2 crust 9 inch pie
 
3/4 cup sugar
 
1 tsp. nutmeg
 
6 cups sliced peeled apples
 
1 1/2 tbsp. butter
 
1/2 cup liquid honey
 
1 tbsp. grated orange rind
 
Icing sugar

Directions

Heat oven to 425 degrees.
Line 9-inch pie pan with half of pastry, leaving 1 inch of pastry hanging over the edge of the pan.
Combine sugar and nutmeg and add to apple slices, mixing lightly.
Put apples into prepared pan.
Dot with butter.
Roll remaining pastry and cut into 1/2 inch strips.
Moisten edge of bottom pastry with water and make lattice top with strips, sealing them to bottom crust.
Turn bottom crust and strips under and flute to make a high edge.
Cover edge with 1 1/2-inch wide strip of aluminum foil to keep it from getting too brown.
Bake 50 to 60 minutes or until apples are tender and pastry is well browned.
Combine honey and orange rind and pour mixture through the openings in the lattice when the pie is baked.
Return to the oven for 5 minutes.
Cool to lukewarm and sift icing sugar over top.
