Ingredients
50 g/2 oz butter or margarine, softened
50 g/2 oz soft, light brown sugar
175 g/6 oz clear honey
1 egg, lightly beaten
50 g/2 oz plain flour
1/2 teaspoon ground cinnamon
50 g/2 oz shredded almonds
Directions
Line two baking trays with non stick baking parchment.
Cream the butter or margarine and sugar until very soft, light and fluffy.
Stir in the honey, then gradually add the egg, beating continuously.
Sift together the flour and cinnamon, then fold these dry ingredients into the creamed mixture.
Finally fold in the almonds.
Drop teaspoonfuls of the mixture well apart on to the prepared baking trays and spread out to give thin, even rounds, about 5 cm/2 in in diameter.
Bake in a moderately hot oven (190C, 375 F, gas 5) for about 10 minutes, or until golden brown.
Allow the biscuits to cool on the trays for a few seconds, then, using a large palette knife, carefully transfer the biscuits to a wire rack to cool completely.
