Hominy Chili Recipe
Ingredients
| 1 Ige. can hominy, drained | ||
| 2 tbsp. bacon drippings | ||
| 1 2-oz. jar pimentos, chopped | ||
| 1 can plain chili | ||
| Cheese | 1/4 Cup (16 tbs), grated | |
| 1 c. coarsely chopped onions | ||
| Sliced olives | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Saute hominy in bacon drippings for several minutes.
Add pimentos, salt and pepper.
Place hominy in greased baking dish.
Heat chili in skillet; stir well.
Sprinkle layer of grated cheese and onions over hom- iny; pour chili over.
Add second layer of cheese and onions.
Top with sliced olives.
Bake in 350-degree oven for 20 minutes or until heated through.
