Hominy Grits Recipe

 1 egg, yolk and white beaten separately
 Salt To Taste
 Margarine1 Teaspoon
 3/4 cup hot, cooked enriched hominy grits
 Half and Half1/4 Cup (16 tbs), reduced

Directions

Stir beaten egg yolk into grits, season with salt and add margarine.
Fold in stiffly beaten egg white.
Transfer to small individual casserole.
Set in pan holding hot water which comes about halfway up the dish.
Bake at 375° F. about 1 hour.
