Hominy Casserole Recipe

1 small onion, diced
1 small bell pepper, diced
1 tablespoon margarine, melted
1 can Ashley green enchilada sauce
Large quantity mild Cheddar cheese, grated
4 cans yellow hominy, drained
Directions
Saute onion and pepper in margarine until soft.
Add enchilada sauce and simmer for 15 minutes.
Combine majority of cheese, hominy and sauce in casserole, and top with remaining cheese.
Bake at 350° until cheese is bubbly and light brown.
