Homestyle Zucchini & Tomatoes Recipe
Homestyle zucchini and tomatoes is a healthy skillet vegetables recipe. Preapred with canned tomatoes and fresh zucchini cooked in onion soup with a hint of garlic, this makes for a lovely little side. Herbed with basil, it is fresh and healthy and can be served aside rice.
Ingredients
2 tablespoons oil
1 medium clove garlic, finely chopped
3 medium zucchini, thinly sliced
1 can (14 1/2 ounces) whole peeled tomatoes, drained and chopped (reserve liquid)
1 envelope Golden Onion or Onion Recipe Soup Mix
1/2 teaspoon basil leaves
Directions
In large skillet, heat oil and cook garlic with zucchini over medium-high heat 3 minutes.
Stir in tomatoes, then golden onion recipe soup mix thoroughly blended with reserved liquid and basil.
Bring to a boil, then simmer, stirring occasionally, 10 minutes or until zucchini is tender and sauce is slightly thickened.
