6 tomatoes, peeled, chopped or
 
12 oz canned tomatoes, drained
 
1 tbsp butter
 
1 onion, finely chopped
 
1 garlic clove, minced
 
2 tbsp tomato paste
 
1/2 tsp sugar
 
Salt and pepper
 
1/4 tsp thyme
 
1/2 cup vegetable or chicken broth
 
1/2 cup light cream tomato, sliced
 
Basil and fresh parsley, chopped

Directions

To peel fresh tomatoes, arrange in a microwave safe bowl.
Cover with hot water.
Seal bowl with plastic wrap.
Bring to a boil, on HIGH.
Remove.
Peel tomatoes under running cold water.
In a second bowl, mix butter, onion and garlic.
Cook in oven 1 minute, on HIGH.
Remove from oven.
Add tomatoes, tomato paste, sugar and seasonings.
Continue cooking 7 minutes, on HIGH.
Stir once.
In a blender, puree mixture.
Fold in broth and cream.
