Thick sour milk- 4 quarts
 
Butter- 3 tablespoons
 
Salt- 1 teaspoon

Directions

GETTING READY
1.Start by cutting through milk several times with a long sharp knife
MAKING
2.In a pot, heat milk slowly to 90° F, or scald until curd is very dry
3.Remove from heat and place in a wet cheesecloth bag
4.Press under a heavy weight 12 to 24 hours or until cheese is dry
5.Force through a cheese sieve or grate fine
6.Place in a wooden bowl, cover with a heavy cloth and keep in a warm place 3 to 7 days or until soft and ripe, stirring occasionally
7.Then place in a skillet and cook, stirring constantly until smooth
8.Add salt and butter, mix well and pour into cups or bowls
SERVING
9.Use this cheese in pasta or macaroni
