1 package dry yeast
 
3 cups whole wheat flour
 
1 cup unbleached all-purpose flour
 
1/4 cup wheat germ
 
4 teaspoons brown sugar
 
Salt to taste, optional
 
3/4 cup hot water
 
1 egg, lightly beaten
 
Sesame seeds

Directions

Put the yeast in a bowl.
Add both flours, wheat germ, sugar, and salt.
Add the water and mix until the dough forms a ball.
On a lightly floured board, knead the dough for 5 minutes, or until it is smooth and elastic.
Break off walnut-sized pieces of dough.
Roll each piece between the palms to form a rope and shape into pretzels.
Young children may be happy inventing their own pretzel shapes.
Preheat the oven to 425 degrees.
Brush some of the beaten egg over each pretzel.
Sprinkle with sesame seeds and with a spatula, transfer each pretzel to a lightly greased baking sheet.
Bake for 10 to 12 minutes, or until browned.
Cool the pretzels to warm before serving.
