Homemade Mayonnaise Recipe
Ingredients
| Egg yolks | 2 | |
| Dry mustard | 1/2 Teaspoon | |
| Salt, cayenne | ||
| 1 cup salad or olive oil | ||
| 3 tablespoons lemon juice or white wine vinegar | ||
Directions
Beat egg yolks in small bowl of electric mixer, at medium speed for 4 minutes.
Combine and add dry ingredients.
Beat again.
Add the oil drop by drop, beating constantly.
When mayonnaise begins to thicken, add lemon juice or vinegar.
Add remaining oil in a very thin stream, continuing to beat.
Store in the refrigerator.
