1)In a large bowl gather the ricotta cheese, powdered sugar, chocolate chips and mix well until smooth.
2)Refrigerate the bowl with the mixture until ready to use and transfer the contents to a piping or zip lock bag with the end cut off for filling the cannolis.
3)Fill the mixture into the canolis generously.
4)Place the cannolis on your favorite platter and dust the powdered sugar and some more chocolate chips on top and enjoy!
*It is not necessary to place the ricotta mixture in the refrigerator after mixing however doing so will only facilitate the next step which is filling the cannolis because when refrigerated the mixture hardens just enough to become easy to work with.
*This is a very versatile recipe, you can use your choice of chocolate chips or any other ingredients for added flavors like liquors or fruits.
