If using an electric mixer, choose the dough hook.
If mixing by hand, sift the flour and salt into a mixing bowl and add the oil.
Beat the eggs, then add them gradually to the mixture and knead until the dough forms a ball and comes away from the sides of the bowl.
Turn the dough out of the bowl, cover with a cloth and leave for 15 minutes.
Roll out on a floured board until the dough is the desired thickness.
Allow to dry for a limited time, so it is not too sticky and it is easy to cut into the required shapes.
Do not leave to dry for too long, as the pasta will crack as you cut it.
You will find it less difficult to roll the dough thinly if you divide the total amount into 2 or 3 portions.
