Directions

Use a china, glass, plastic or stainless steel bowl, not aluminum.

Pulverize the mustard seeds together in a coffee grinder or suitable blender. (This may work better if you soak the mustard seeds in water overnight first.)

Add water, mix to smooth paste. ALlow to rest for 10 minutes to let the flavors develop.

Add the acid and season with salt, taste until the mustard achieves the balance you like.

Add optional flavorings, taste again until satisfied.

Sterilize a glass jar and its lid in boiling water, the microwave or the dishwasher, then put the sauce in the jar and seal. Keep aside for about 10 days to let the flavors develop fully.
