Creamy Hollandaise Sauce Recipe
Hollandaise Sauce always, almost magically augments the flavor of any dish it is added to. I love using my Hollandaise Sauce with seafood and fish preparation. I am sure you will agree with me once you try this Hollandaise Sauce recipe!
Ingredients
1/4 cup butter
1/4 cup all purpose flour
Salt and pepper
1 1/4 cups milk
1 egg yolk
2 tablespoons light cream
1 teaspoon lemon juice
Directions
1 Place 25g/1 oz (2 tablespoons) butter in a jug and microwave on full power for about 1 minute, until very hot.
2 Stir in flour and salt and pepper to taste. Stir in milk.
3 Microwave on full power for 3 1/2 minutes. Beat very well with a balloon whisk, then set aside. (It is important to allow the sauce to stand for a short while before adding the egg yolk and cream as the sauce may curdle if it is too hot.)
4 Beat together the egg yolk and cream, then beat into the slightly cooled sauce. Beat in the remaining butter, a little at a time, and finally stir in the lemon juice.
