Directions
1. In 1-cup microwavable liquid measure combine first 2 ingredients; microwave on Low (20%) for 1 minute, stirring once halfway through cooking, until margarine is softened.
2. Stir juice and mustard into egg substitute mixture; microwave on Low for 3 minutes, stirring every 30 seconds, until thickened. Stir in pepper. (If mixture curdles, transfer to blender and process on low speed for 30 seconds, until smooth.)
