Hollandaise Sauce Recipe

Ingredients
1 eggyolk
1 tsp evaporated (regular or skim) milk
1/8 tsp salt
Dash cayenne pepper
1 tsp lemon juice
1 tsp Margarine
Directions
In the top of a double boiler, heat egg yolk, evaporated milk, salt, and cayenne pepper until thick.
Place over hot water.
Beat lemon juice into egg mixture until thick and creamy.
Remove double boiler from heat.
Add margarine, 1 tsp (5 mL) at a time.
Beat until margarine is melted and blended in.
Place over hot water.
