Flour And Eggs Hollandaise Recipe

Ingredients

 
3 oz. butter
 
2 Tbs. boiling water
 
1/2 tsp. flour
 
2 Tbs. lemon juice
 
2 egg yolks
 
Few grains cayenne pepper

Directions

Cream the butter and flour.
Beat the egg yolks until thick and light and add them to the butter.
Gradually mix in the boiling water.
Put the sauce over a low heat or in a double boiler or basin over boiling water and stir until the sauce thickens.
Add lemon juice and seasoning.
The sauce may be made in advance, stored in the refrigerator and re heated, adding a little hot water if it is too thick.
