Ingredients
1/2 cup (125 mL) cold butter
2 tbsp (30 mL) lemon or lime juice
1/2 tsp (2 mL) Dijon mustard
1/8 tsp (0.5 mL) pepper
2 egg yolks at room temperature
Directions
€¢ Dice the butter and place in the food processor bowl without the metal blade. Place the bowl in the microwave oven and microwave at HIGH 30 seconds to 1 minute. The butter must not melt but only soften.
€¢ Return the bowl to the food processor, insert the blade, add the lemon or lime juice, mustard and pepper. Cover and operate 2 seconds or until the mixture is creamy. Without stopping the motor, add the egg yolks through the tube, 1 at a time, blending 30 seconds after each addition.
€¢ Uncover, remove the blade and microwave at MEDIUM approximately 1 minute. Stir, and microwave another 20 seconds if necessary.
