Classic Hollandaise Recipe
Ingredients
| Butter - 3/4 to 1 cup | ||
| Egg yolks | 3 | |
| Cold water | 1 Tablespoon | |
| Lemon juice | 1 Tablespoon | |
| Salt | 1 Pinch | |
| Cold butter | 2 Tablespoon | |
| Salt | 1 To taste | |
| Pepper white | 1 To taste | |
| Fresh lemon juice - to taste | ||
Directions
MAKING
1.Heat butter and reserve it.
2.Whisk the yolks and once done, place them in the top part of double broiler for a minute.
3.Stir in lemon juice, water and salt.
4.Put the broiler on simmering water.
5.Stir in 1 tablespoon of butter and whisk until creamy and smooth.
6.Take the broiler off from heat and add remaining cold butter.
7.Stir well and gradually add melted butter until thick mixture is formed.
8.Add a sprinkling of salt, white pepper and lemon juice.
SERVING
9.Serve with sea foods.
