11 to 12 cups diced cooked turkey
 
12 hard-cooked eggs, chopped
 
1 bunch fresh parsley, finely chopped
 
4 cups finely chopped celery
 
21/2 cups mayonnaise
 
3 tablespoons lemon juice
 
11/2 teaspoons pepper
 
1 teaspoon salt
 
1 teaspoon paprika
 
Fresh parsley sprigs Paprika

Directions

Combine turkey, eggs, chopped parsley, and celery in a large bowl.
Combine next 5 ingredients; mix well.
Spoon over turkey mixture; toss gently.
Cover and chill thoroughly.
Garnish with parsley sprigs and paprika.
