Ingredients

7 1/2 c. graham cracker crumbs
1 1/3 c. sugar
1 tsp. cinnamon
1/2 c. butter, softened
2 tbsp. unflavored gelatin
2 eggs, separated
1/2 c. milk
1 tsp. salt
1 tbsp. grated lemon peel
2 c. small curd cream-style cottage
cheese
1/2 c. lemon juice
2 tsp. vanilla
1 c. heavy cream

How to make Holiday Cheesecake

Combine crumbs, 1/3 cup sugar and cinnamon in bowl; blend butter and crumb mixture together thor- oughly.
Press 112 of the crumb mixture into bottom of 9-inch springform pan.
Soften gelatin in 1/4 cup cold water.
Beat egg yolks slightly.
Combine egg yolks, milk, remaining sugar and salt in double boiler; cook over hot water, stirring constantly, until mixture coats metal spoon.
Remove from heat.
Dissolve gelatin in egg yolk mixture; add lemon peel.
Cool; beat well.
Mix cottage cheese, lemon juice and vanilla together; add to gelatin mixture, stirring well.
Fold cream into gelatin mixture.
Whip egg whites until stiff peaks form; fold into cream mixture.
Pour into prepared pan; sprinkle with remaining crumb mixture.
Chill overnight.
Garnish with candied fruits.
