Holiday Split Peas Vinaigrette Recipe
Holiday split peas vinaigrette is a cooked peas vinaigrette. Prepared with sausage and onions along with a vinaigrette blend of oil with parsley and mustard to taste, it is finished with the addition of tomatoes. With salt and sugar to taste, this split peas vinaigrette can be served with peas of choice.
Ingredients
4 cups green or yellow split peas, washed
2 quarts water
3 pounds cooked smoked sausage, sliced
12 medium (4 pounds) onions, finely chopped and steamed or sauteed
2 cups olive oil
3/4 cup vinegar
1 1/2 cups chopped fresh parsley
1/3 cup German hot or coarse mustard
Sugar to taste
Salt and white pepper to taste
12 medium (4 pounds) tomatoes or red bell peppers, coarsely chopped and sauteed
Directions
Combine split peas and water in stockpot.
Bring to a boil; reduce heat and simmer 20 minutes or until peas are tender.
Remove from heat; drain, if necessary.
Stir in sausage and onions.
Keep warm.
Blend together oil, vinegar, parsley, mustard, sugar, salt and pepper.
Pour oil mixture over split pea mixture; blend.
Gently stir in tomatoes.
