Chef Melody Shammam stops by the Fox 5 Morning News set to discuss alternative ideas for grilling on the 4th of July. Grilled Lamb Chops are perfect for a summer barbeque and she suggests preparing a Greek salad or yogurt to go with them. Honey Mustard Herb Grilled Chicken is a perfect combination of sour and sweet flavors with a hint of fresh herbs.
Ingredients
Honey Mustard Herb Grilled Chicken:
Skinless and boneless chicken breasts - 3 pounds, halved lengthwise or pounded to ½ thickness
White onion - 1 ½ cup (about 1 onion), finely chopped
Extra virgin olive oil - 1 cup
fresh lemon juice - ½ cup
Dijon mustard - 2 tablespoons
Honey - 3 tablespoons
Salt - 2 teaspoons
Black pepper - 1 teaspoon
Fresh oregano - 1 tablespoon, finely chopped
Fresh thyme leaves - 1 teaspoon
Fresh rosemary - 1 teaspoon, finely chopped
Fresh chives - 1 teaspoon, finely chopped
Grilled Lamb Chops:
Lamb Loin Chops - 8 (about 2 ½ pounds)
Garlic - 4 large cloves (about 2 tablespoons), finely minced
Fresh mint - ½ cup, finely chopped
Fresh oregano - ½ cup, finely chopped
Fresh lemon juice - 1 tablespoon
Extra virgin olive oil - 1/3 cup
Sea salt and fresh ground pepper
Grilled Cherry Tomatoes (optional)
Yogurt Sauce
Directions
Honey Mustard Herb Grilled Chicken Preparation:
GETTING READY
1) Mix onion, olive oil, lemon juice, salt and pepper in a medium mixing bowl
2) Whisk in mustard and honey, add oregano, thyme, rosemary, and chives. Mix until well combined.
3) Place chicken breast pieces in a medium sized (about 3 qt) Pyrex dish, pour marinade mixture over and turn to coat.
4) Cover and refrigerate overnight.
MAKING
5) Prepare barbeque and set to medium heat.
6) Spray with non-stick spray to prevent sticking.
7) Add chicken breast pieces (discard marinade) and grill until golden and cooked thru turning often 8-10 minutes total.
8) Remove from heat and let the chicken rest for 2-3 minutes.
SERVING
9) Serve immediately.
Grilled Lamb Chops Preparation:
GETTING READY
1) Generously sprinkle salt and pepper on both sides of lamb chops. Set aside.
2) Whisk garlic, mint, oregano, lemon juice, and olive oil in a small bowl.
MAKING
3) Pour mixture in a large glass baking dish.
4) Add the lamb chops to the baking dish and generously coat lamb chops on both sides with the marinade.
5) Allow flavors to absorb, about 15 minutes.
6) Prepare barbeque on medium- high heat and grill lamb chops to desired doneness, about 6- 7 minutes per side for medium.
SERVING
7) Serve with grilled cherry tomatoes and yogurt sauce.
TIPS
Lamb chops may be marinated one day ahead.
