1 (3 1/2- to 5-pound) beef tip roast
 
1 tablespoon minced fresh ginger
 
1 large clove garlic, minced
 
1/2 teaspoon pepper

Directions

Preheat oven to 325°F.
Combine ginger, garlic and pepper; rub evenly over surface of beef tip roast.
Place roast, fat side up, on rack in open roasting pan.
Insert meat thermometer so bulb is centered in thickest part of roast.
Do not add water.
Do not cover.
Roast to desired degree of doneness, allowing 35 to 40 minutes per pound.
Remove roast from oven when meat thermometer registers 155°F (medium).
Let roast stand 15 to 20 minutes in warm place before carving.
