Holiday Banana Muffins Recipe

Ingredients
2 cups whole wheat flour
1/4 cup light brown sugar
1 tablespoon baking powder
1 cup mashed very ripe banana (about 2 large)
1/3 cup orange juice
2 egg whites
1 teaspoon vanilla extract
1/3 cup dried cranberries or golden raisins
TOPPING
1 tablespoon light brown sugar
1 tablespoon finely ground pecans
Directions
1. To make the topping, combine the brown sugar and pecans in a small bowl. Set aside.
2. In a large bowl, combine the flour, brown sugar, and baking powder, and stir to mix well. Add the banana, orange juice, egg whites, and vanilla extract, and stir just until the dry ingredients are moistened. Fold in the cranberries or raisins.
3. Coat muffin cups with nonstick cooking spray, and fill 3/4 full with the batter. Sprinkle the topping over the batter, and bake at 350°F for 14 to 16 minutes, or just until a wooden toothpick inserted in the center of a muffin comes out clean.
4. Remove muffin tin from oven, and allow it to sit for 5 minutes before removing muffins.
