Hoecake Recipe
Hoe cake is a traditional corn meal cake that was often cooked outdoors. Prepared with salt and melted lard of choice, the hoecake is oven baked in a pan in the form of individual cakes.
Ingredients
1 cup water ground white corn meal
1 tablespoon lard, melted
Boiling water
1/2 teaspoon salt
Directions
Combine corn meal and salt, then add lard and enough boiling water to make a dough heavy enough to hold a shape.
Form into 2 thin oblong cakes and place in a heavy, hot, well greased pan.
Bake in a preheated 375° oven about 25 minutes.
