1/4 cup (60 mL) butter or margarine
2 medium potatoes, diced
1/2 cup (125 mL) carrots, diced or minced
1 large onion, diced
1/4 cup (60 mL) water
1 lb (500 g) haddock, fresh or frozen
2 5-oz (142 g) cans clams, with juice
1 lb (500 g) scallops, cut in half
1 lb (500 g) small shrimp (optional)
1 cup (250 mL) light cream
1/2 tsp (2 mL) curry powder (optional)
Salt and pepper to taste
Directions
€¢ Place the butter or margarine in an 8-cup (2 L) microwave-safe bowl and melt 1 minute at HIGH.
€¢ Add the potatoes, carrots and onion.
€¢ Stir, add the water, cover and microwave 10 minutes at MEDIUM-HIGH, stirring once after 5 minutes of cooking.
€¢ Cut the haddock into small individual portions, then add to the vegetables together with the clams and their juice.
€¢ Microwave 6 minutes at MEDIUM.
€¢ Add the remaining ingredients. Stir well.
€¢ When ready to serve, cover and microwave 8 minutes at MEDIUM.
