Ingredients
| 2 shallots (or scallions) finely chopped | ||
| Butter | 4 Tablespoon | |
| 1 lb. ground lean chuck | ||
| Ham | 1/4 Pound | |
| Ice water | 4 Tablespoon | |
| 1 egg slightly beaten | ||
| Pinch of thyme | ||
| Ground pepper | 1 To taste | |
| Flour | ||
| Oil | 1 Tablespoon | |
| 1/4 cup beef consomme | ||
| 1/4 cup Hiram Walker | ||
| Apricot Flavored | ||
| Brandy | ||
| Butter | 2 Tablespoon | |
| Parsley | ||
Directions
Saute the shallots, add the next 7 ingredients.
Wet hands and shape into patties.
Refrigerate for 1 hour.
Dust patties with flour; saute in oil and keep in warm oven.
Add consomme, Apricot Brandy, and cook five minutes.
Add butter and pour over patties.
Sprinkle with parsley
