Hickory Smoked Turkey Recipe

Ingredients
1 10 pound ready to cook turkey
1/4 cup salad oil
1 1/2 cups salt
1 cup vinegar
1/4 cup pepper
2 teaspoons finely chopped parsley
Directions
Rinse bird; pat dry with paper towels.
Make a paste of oil and salt; rub 1/4 cup of mixture inside of bird.
Truss turkey and balance on spit or use rotary roast rack.
Brush with salad oil.
Have slow coals at back of barbecue, a drip pan under revolving bird.
For moisture, place a pan of water at end of firebox.
Roast, hood down, for one hour.
Then brush with sauce made by combining the remaining salt with vinegar, pepper, parsley.
Toss damp hickory chips on coals.
Roast, hood down, 3 1/2 to 4 hours longer.
Baste bird every 30 minutes or so (also check on fire, hickory, and water in pan).
About 20 minutes before roasting time is up, snip cord that holds drumsticks.
Test doneness as for Whirlibird Chickens.
Let rest 15 minutes before carving.
