Ingredients

 Onions5 Ounce, chopped
 Carrot1 Small, finley diced
 Bay leaf7
 Thyme Sprig1 Small
 White wine2/3 Cup (16 tbs)
 4 herrings, heads removed
 Salt To Taste
 Pepper1
 Butter2 Tablespoon
 All purpose flour2 Tablespoon
 Milk1 1/4 Cup (16 tbs)

Directions

Put the onions and carrot into a bowl with the bayleaf, thyme and white wine.
Cover and microwave on HIGH for 6 minutes.
Clean the herrings and rinse under plenty of cold running water.
Pat dry on kitchen paper.
Set aside the roes.
Make 2 or 3 deep incisions in the fleshiest part of the fish.
Pour the onion and carrot mixture into a rectangular dish.
Arrange the herrings on top and add salt and pepper.
Cover and microwave on HIGH for 6 minutes.
Put the butter into a bowl and melt in the microwave oven for 1 minute on HIGH.
Sprinkle over the flour and stir well.
Add the milk and stir again.
Microwave on HIGH for 3 minutes, whisking with a hand beater after every minute.
Transfer the fish to a serving dish with a slotted spatula.
Cover to keep warm.
Discard the thyme and bayleaf and add the fish cooking liquid to the sauce in the bowl.
Add the herring roes.
Cook on HIGH for 1 minute.
Taste and adjust seasoning.
Force the sauce through a fine strainer (sieve) by pressing it with the back of a wooden spoon.
Pour the sauce over the herrings
