Ingredients

 Herrings - 4 good sized
 Potato - 12 oz [375 g], cooked and sieved
 Butter - 1 oz [25 g]
 Parsley - 2 teaspoons [2X5 ml spoons], chopped
 Onion - 1 oz [25 g], chopped
 Made mustard - 1 teaspoon [1X5 ml spoon]
 Mixed herbs - a pinch
 Egg1 (Potato Stuffing:)
 Lemon1 (Potato Stuffing:)
 Salt1 To taste (Potato Stuffing:)
 Pepper To Taste (Potato Stuffing:)

Directions

GETTING READY
1) Preheat oven to 400°F (200°C), Gas Mark 6.
2) Grease a covered casserole and place aside.
3) Remove the heads and backbones of the herring.
4) Use cooking salt to rub away the black skin.
5) Wash the fish and pat dry with paper towel.

MAKING
6) In a pan, add butter to melt.
7) Add all the ingredients, to mix together with the melted butter.
8) Adjust seasoning to the taste.
9) Stuff the fish with equal amount of stuffing. To stuff, either roll up the herrings, from heads to tails, or fold in half to normal shape.
10) Use cotton to tie around the fish to secure the stuffing.
11) Place the stuffed herrings in the greased covered casserole.
12) Place inside oven to bake for 20 minutes.

SERVING
13) Garnish with lemon butterflies to serve.
