Herring Stuffed Beets Recipe
Ingredients
| 24 small whole cooked beets | ||
| 1 6-ounce jar pickled herring tidbits | ||
| Sour cream | 1/4 Cup (16 tbs) | |
| Dillweed sprigs (garnish) | ||
Directions
With small melon scoop, hollow out top of each beet.
Drain and coarsely shred herring and fill each beet with 1/2 teaspoon.
Dot with sour cream and garnish with dillweed sprigs.
Serve cold.
