Herring Roe Tit Bits Recipe
Ingredients
| 6 large soft herring roes | ||
| 6 rashers of bacon | ||
| Lemon juice | 1 Teaspoon (Leveled) | |
| 12 small rounds of toast or fried bread | ||
| Anchovy paste | ||
| Gherkins | 3 Small | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Cut the roes into halves, season lightly with salt and pepper.
Divide the rashers of bacon into halves, remove the rinds and wrap each piece of roe in the bacon.
Sprinkle lemon juice on the bacon and secure the rolls on a skewer.
Cook for about 15 min in a fairly hot oven (375° F., Gas 5) or under a moderately hot grill—reducing the heat after crisping the bacon, to make sure the roes are cooked.
Spread the rounds of toast or fried bread with anchovy paste and thin slices of gherkin.
Put the roes on top—serve hot or cold.
